Chilli Potatoes Recipe
Ingredients
- 4 medium-sized potatoes, peeled and diced
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1-inch ginger, grated
- 1 bell pepper, thinly sliced (any color of your choice)
- 1 carrot, julienned
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- Salt and pepper to taste

Instructions
Prep the Potatoes
- Peel the potatoes and dice them into bite-sized cubes.
- Parboil the potatoes in salted water until they are just fork-tender. Drain and set aside.
Fry Aromatics
- In a wok or a large skillet, heat vegetable oil over medium-high heat.
- Add chopped onions, minced garlic, and grated ginger. Fry until the onions become translucent and the mixture is aromatic.
Add Vegetables
- Toss in the julienned carrots and sliced bell pepper. Stir-fry for a few minutes until the vegetables are slightly tender but still vibrant.
- Add the parboiled potatoes to the wok. Gently stir to combine the potatoes with the vegetables.
- Pour soy sauce, oyster sauce, rice vinegar, and sesame oil over the potato and vegetable mixture. Sprinkle sugar, salt, and pepper to taste.
